If his story is to be believed, the chef at Azabu-Juban's Burgaz Ada is part of a very special group. This assembly of less than 20 cooks is the only one of its kind in the world, and is dedicated to the preservation of the Ottoman Empire's court cuisine. Such royal delights, originally thought up by the Sultan's doctors and palace chefs, are of course what his colourfully decorated restaurant specialises in. Incorporating a myriad of exotic herbs and spices, the 12-variety appetiser platter is stacked with traditionally prepared, vegetable-heavy dishes but arranged almost like a piece of art. You'll also want to try the chef's signature creation: grilled spring lamb chops quickly dipped in a 'secret', herb-packed marinade before being prepared over an open fire.
