Mathias Dahlgren's previous restaurant, Bon Lloc, was regularly listed as one of the best in the country, so it was a shock when he decided to close it and temporarily vanished from the scene. Thankfully his new place, located in the Grand Hôtel, lives up to expectations. It's a two-room affair: the Food Bar is a stripped-down room with bare wooden tables and a steel bar, while the Dining Room is classy and elegant. The modern Scandinavian food is faultless: smoked salmon from Tromsö, Norway; mussels from New Bedford, USA; even oven-baked wild chocolate from Bolivia. Head to the Dining Room for a splurge dinner, or for a more affordable experience perch in the Food Bar where dishes start at 95kr.
