This Northern Beaches distillery (open for bookable behind-the-scenes tours) and tasting bar (open Fri 4pm-10pm; Sat noon-10pm; Sun noon-6pm) crafts local whiskies, gins and botanical vodkas. They spice up spirits by using sustainable native and marine botanicals (many of which have been sourced from the nearby coastline), with head distiller, Tim Stones – a Londoner trained by the masters and makers of Beefeater Gin and Plymouth Gin – at the helm.
If you want to try their goods in cocktail form, saddle up at the tasting bar, for a classic Martini or a refreshing G&T, alongside cheese and charcuterie boards. If you're after something a little more substantial, they will order you in pizza too.
