This 1996 debut venture from Apex was refurbished and extended just a couple of years later; more than a decade on, it remains a slick, contemporary venue in a brilliant location (the deluxe rooms look directly across to the castle). The pedestrian-friendly Grassmarket is on the doorstep, with a range of busy bars, although the hotel has its own bar-brasserie as well as a restaurant (also with castle view) and a dinky little spa.
