Since Santi Santamaria passed away, his Sant Celoni restaurant has been in good hands: those of his daughter Regina and her partner Xavier Pellicer, who in his own right won two Michelin stars at Àbac. Pellicer has kept the spirit of Santamaria alive, along with new developments such as incorporating biodynamic produce. But the menu still features all of Santi’s classic dishes, such as prawn ravioli.
