The breads and fish dishes on the Mediterranean-inspired menu, all prepared here, mean an almost 24-hour day for the oven; and the place has its own market garden in which vegetable and herbs destined for the pot are raised. For starters, try mollejas (sweetbreads) and for a main course, the incredibly tender bondiola (pork) with pear chutney.
