Sashimi and sushi plus sleek decor isn't an original formula, especially in a city in which Japanese fusion restaurants are multiplying by the minute. Dashi remains near the top of the heap, though, thanks to Jorge, the charismatic world traveller who runs the show. The sophisticated, light-filled interior is done up in black lacquer and white linen with the occasional rose-coloured splash, creating a minimalist backdrop for superb sushi rolls crafted from red porgy, octopus and, of course, salmon. For lunch, order individual pieces based on whatever the sushi man is working with; or traditional options like vegetable yakisoba and tofu steak are also beyond reproach. The branch on Salguero, it's worth noting, serves kosher sushi.
