Vegan baker Emily Smith is chief baker and co-owner (with her dad) of this East Village destination, and despite not eating cream or eggs or milk chocolate, she still manages to put out perfectly solid red-velvet cupcakes topped with indulgent buttercream; saucer-sized chocolate-chip cookies with deep brown-sugar notes; and hearty corn muffins hiding a whole hard-boiled egg inside, the perfect handheld breakfast—that is, if you eat that sort of thing.
