Famous for haute cusine style dishes with an Asian twist, this Gordon Ramsay Holdings restaurant has decided to go all the way east for its new bar menu of sushi and sashimi.
Behind the counter is chef Gohei Kishi, who’s worked at a number of well-respected Japanese and European sushi restaurants. He serves up modern well-presented dishes to bar customers, or anyone who wants an add-on to the restaurant menu.
Sweet flakes of snow crab came in a neat row on top of three little heaps of earthy mixed seaweed. The dish was enlivened by a sliver of pickled wasabi. The presentation of a cucumber, pickled ginger and tuna roll was novel – with the tuna balanced on top of the rice, but the delicate fish was lost among the other flavours and textures.
The quality of the ingredients here is clearly high, and the dishes interesting, but nothing blew our minds. It did, however, blow our budget.
