What is it: A bus-stop-sized joint tucked into a JP Nagar bylane known for packing serious flavour

Why we love it: The signature here is the Vijayanagar roast dosa – a proper Bengaluru classic. Properly crisp on the outside, soft and steamy within, built by someone who understands structure and has zero tolerance for soggy finales. But make no mistake, the dosa is just the vehicle. The chutney is the destination. It lands a chilli-led hit followed by that deep, savoury hum of asafoetida. 

Time Out tip: Go chutney-first. Take your first bite of dosa with just chutney before mixing in anything else.

What is it: A 1926-born Gandhinagar tiffin institution where breakfast has outlived governments 

Why we love it: This is not the usual potato-heavy situation that flattens you before your day has even begun. The sagu filling is light, grainy, and gently spiced, tucked into a crackly dosa. The sambar means business too. Hearty, vegetable-loaded, with assertive bits of radish and Malabar cucumber reminding you this is not decorative broth. Add coconut chutney, strong coffee, and the background murmur of people who have been eating here for decades, and suddenly you are in a sepia-filtered montage minus the bell bottoms.

What is it: A 50-year-old Basavanagudi institution known as the birthplace of the khali dosa and proud of its refusal to change

Why we love it: Hotel Dwaraka has been serving the same khali dosa for half a century, which immediately makes it older than most residents of this city. The dosa arrives fluffy and delicately bouncy, made without an ounce of fat and somehow still retaining the melt-in-your-mouth experience. The recipe has survived decades without reinterpretation or modification. Don’t miss the khali benne dosa, crowned with a small blob of golden butter.

What is it: A tiny hole-in-the-wall where big flavours rule over what many swear is Bengaluru’s most rewarding dosa if you can wait

Why we love it: If you successfully navigate Cubbonpete’s gloriously confounding streets, you are rewarded with a nearly dark 10×10, blink-and-you-miss-it room where SK Tiffins has been feeding Bengaluru for over 30 years. The first thing that hits you is the smell of nutty heat meeting a banana leaf. Chutney pre-soaks your first bite and a benne-heavy masala dosa arrives with a deep golden crunch. 

Time Out tip: Don’t miss the bath, lemon rice, chutney, and sagu combo.

Sri Guru Kotteshwara Benne Dose

What is it: A family-run Davangere benne dosa joint serving buttery dosas cooked on a traditional wood fire

Why we love it: The batter, lightened with puffed rice, hits the wood-fired tawa and inflates, staying soft in the middle while the edges crisp just enough to remind you this is still a dosa. The white butter’s homemade and applied with the confidence of people who fear neither cholesterol nor judgment. The chutney deserves its own applause, with green chillies boiled before grinding, adding a fresh fiery flavour. Order the open masala or the benne masala. Both are best-sellers, and both will ruin you for restrained breakfasts elsewhere.

Chalukya Samrat

What is it: A Sheshadripuram landmark known for their ghee roast masala dosa

Why we love it: This is not your standard Mysore masala. The batter hits the tawa, then the masala and fiery kempu chutney are pressed directly into the dosa as it cooks, allowing the flavours to fuse rather than sit politely on top. The result is crisp edges, a soft centre, and a reddish-orange hue that puts tropical sunsets to shame. Each dosa takes around 15 minutes, but is entirely worth the wait. A trio of chutneys lets you adjust the heat to your liking. And don’t miss the towering Chalukya statue guarding the entrance! The air-conditioning makes waiting on the first floor far more pleasant.

Namma Kudla

What is it: A basement Mangalorean canteen in Malleshwaram, serving coastal Karnataka comfort food.

Why we love it: You smell Mangalore buns before you see the dining room. Decor mirrors the food: unfussy, coastal, and warm. Neer dosa is the headliner. Thin, lacy, and fabric-like, made from a watery rice-and-coconut batter with no lentils, it arrives with yellow kurma and green chutney that soak right in. The supporting cast reads like a coastal greatest-hits album: pathrode, kotte kadubu, sukrunde, and arsina yele gatti. Briny, coconut-forward, and deeply comforting, this is Bengaluru’s quickest route to the coast.

Time Out tip: Go early for the freshest batches. Ask for a drizzle of coconut oil on your neer dosa.
