Placed at the heart of rainbow-friendly Neil Road is L’Aiglon, a new bar that hopes to match the serious drinks at The Library and The Cufflink Club nearby. At first glance, L’Aiglon reads like a plush parlour with mixed Parisian and Asian touches, which is exactly what its owner and new industry entrant Pierre-Emmanuel Plassart hopes to convey in the 76-seater, infusing his experiences traveling around the world as a fashion photographer and filmmaker. With gin and a strong portfolio of rare champagnes and whiskies on its drinks plinth, L’Aiglon notably caters eight mixed drinks ($18-$22) shaken up by local barman Louis Tan to go with the Asian French Fusion sharing plates like the PEP chicken mini burger and rare blue obsiblue shrimp tartare dressed with ginger flower and lime caviar ($6-$18). The premium and rare experience is also carried through in champagne names ($100-$6,000) on the menu like the Bollinger Brut Blanc Noirs Cuvee Vieilles Vignes Francaises and the Chateau Labruyere – only 60,000 bottles are produced yearly – which will make its world debut at the bar as its house bubbly.
