The swinecentric cook-off is back, this time with an all-female lineup of top-notch toques: Missy Robbins (A Voce), Alex Guarnaschelli (Butter), Leah Cohen (Pig and Khao), Elizabeth Falkner (Krescendo) and Shanna Pacifico (Back Forty West). Each chef will turn a whole heritage-breed hog into a snout-to-tail smorgasbord for 20 judges—including Sueños chef Sue Torres, Gavin Kaysen of Café Boulud and Hearth’s Marco Canora—and 400 guests, who will crown one the Princess of Porc. Wash down the gut-busting feast with Scholium Project vino, Anchor Brewing beer and Breckenridge bourbon. Tipplers can also take to the specialty bars for mescal or a classic Manhattan. Butcher demonstrations, sustainable oysters and pork-infused desserts round out the festivities.
