Although dining in an empty nightclub isn’t ideal, you gotta do what you gotta do if you want Bulgarian food: The cuisine isn’t exactly taking over the city. A glass of rakia (Bulgarian grape brandy) and a salad is the traditional start to an authentic meal. Luckily, there’s no pressure to conform here, so feel free to start your meal with tarator instead, a cold yogurt soup with bits of cucumber and creamy, sour yogurt curds at the bottom of a deep bowl. If you can dance on a full stomach (Eastern European club kids show up later on), move on to sirene po shopski, a wobbly egg that spills luscious yolk onto sweet roasted red peppers and baked feta.
