New York is crammed with 1,000 Irish-lilted pubs, both authentically Gaelic and otherwise. Add yet another to the bunch, this time imported from sunny West Hollywood, of all places. Set in the Renaissance New York Midtown Hotel, the 10,000-square-foot bar is fitted with a wraparound terrace, a fully retractable rooftop and three handmade mahogany bars with a selection of more than 50 Irish whiskeys (Jameson, Knappogue Castle 12). Those are available neat or as the base of cocktails such as the quadruple-booze Make It There, tempering Jameson Black Barrel with Carpano Antica, Amaro di Angostura and Cynar 70. To pad the belly, chef Maximillian Nazabal turns out pub grub ranging from New York–specific items (charred rib eye, pappardelle bolognese) to signatures held over from the L.A. original, including nachos layering Irish cheddar and peppered bacon over house kettle chips.
