Of course a Scottish restaurant whose name references usquebaugh, the Gaelic term for ‘water of life’ – better known as whisky – would be a treasure trove of single-malts. More than 70 single-malt expressions from all regions of Scotland, including the lesser-known Island and Campbeltown, are on the menu, and they range from your typical Ardbeg 10 ($20/glass, $340/bottle) to the more unattainable Glen Garioch 1973 ($170/glass).

UsQuBa’s Scotch blends, American bourbon and rye, and Irish whiskey are just as well curated as the single-malts. Ever heard of Master of Malt’s Reference Series or Teeling Single Malt? Well, the former’s ($90/dram, $1,530/bottle) designed as an educational tool for novice drinkers to learn more about how the liquor is produced, while the latter’s ($18/dram, $310/bottle) an Irish whiskey. And while you’re at this handsome bar, save some room for the food. Head chef Guven Uyanik has worked at three-Michelin-starred kitchens around the world, and his refined techniques show up in plates such as the butter-poached lobster ($58) and scallop ceviche ($25).
