Australia’s top-rated food market will welcome 53 new vendors when the expansion wraps up in late 2026

As if we needed another reason to obsess over Adelaide Central Market, the city’s crown jewel is about to level up in a major way. This iconic undercover food mecca is currently undergoing a once-in-a-generation $600 million transformation that will double its size and make room for 53 exciting new vendors.
Established in 1869, the Adelaide Central Market isn’t just one of the Southern Hemisphere’s largest undercover fresh produce markets but was recently crowned the third-highest-rated food market on Earth. It's currently home to 70 traders from 40 nationalities and draws more than 8 million curious foodies every single year. That capacity is expected to increase to a mega 10 million visitors after the landmark expansion wraps up in late 2026.
In the works since 2019 (with construction kicking off in 2022), the expansion is part of Adelaide’s landmark $600 million Market Square project. Soaring 40 storeys above the original market hall (which will remain largely untouched), the shiny new tower will house Australia’s first 248-room Treehouse Hotel and 234 boutique apartments, alongside retail outlets, a Coles supermarket, prime office space and a sprawling 3,000-square-metre rooftop terrace. But we foodies are most excited about the new market hall and atrium, featuring 53 diverse vendors.
Among the newcomers are the multi-award-winning Shapeshifter Brewing Co, traditional French dessert maker Crepe Bar, Japanese matcha bar Matcha K, specialty coffee shop Caffe Fontana, and returning favourite O’Sushi O’Bento. Beyond the main hall, an extended dining zone spilling out onto Gouger and Grote Streets will feature even more food and beverage concepts. Stay tuned as more traders are revealed closer to the grand opening in late 2026.
