Set to open in December, this is the newest addition to Crystalbrook Collection’s growing family of personality-filled hotels and resorts. Step inside and you’ll be met with stylish, refined interiors, in a calming earth-toned colour palette. It’s all been locally designed by the clever people over at South Australian firm, PACT Architects.
Crystalbrook Sam has 196 rooms including four suites, an open-air heated pool, a top-floor restaurant and bar, a day spa, sauna, and library nook, so you’ll be spoilt for choice when it comes to building an itinerary to unwind. Plus, each room features 100 per cent waste-free, compostable and eco-friendly amenities as per Crystalbrook’s responsible luxury ethos.
Here, dining is a highlight with two in-house offerings. Leading the way is Matines, the top-floor coastal bar and grill perched twelve storeys above Halifax Street. You can enjoy a feast overlooking Adelaide Hills at this 120-seater, which champions locally-sourced South Australian produce with live-fire cooking taking centre stage. Whether you opt for golden-hour martinis, settle in for a long lunch or make dinner extra special in the private dining room, Matines has you covered.
Downstairs, you’ll find a laidback affair at Café Sami, nestled into the lobby. By morning, the space dishes up all your familiar cafe goodies with pastries and coffee pours, and by night, you can pair delicate cheeses with wine or relaxed evening drinks.
No five-star stay is complete without a spa treatment or two. Luckily, Crystalbrook’s Eléme Day Spa is making its South Australian debut, complete with a selection of treatments showcasing some of the state’s most iconic local ingredients (like its sea salt, lavender and Kangaroo Island honey). Australian-made Sodashi skincare products and Eléme’s custom oils add to the experience, with treatments tailored to suit your needs. And staying at the hotel isn’t a requirement to make use of the hotel’s luxe offerings, with the spa welcoming Adelaide locals and visitors alike.
Crystalbrook Sam is situated in the heart of a laidback neighbourhood on leafy Halifax Street, just south of the renowned Adelaide Central Market. Guests can take a short walk a few streets over and get immersed in the local scene, discovering hidden gems and hotspots that are just a stone’s throw away.
If you’re keen on a trip down south to explore this new Adelaide offering, opening rates start from $275 per night. Book direct before December 17, 2026, and you’ll score a few extra indulgences with your stay, with an add-on called ‘Sam’s Warm Welcome’. This stacked opening package is an exclusive extra, where you’ll score two welcome martinis, a signature snack, $25 extra dining or drink credit, plus a late check-out at noon and a bespoke finishing salt from Matines as a souvenir to take home.
Or, you can select a ‘Stay Only’ rate booking and you’ll receive a surprise extra called ‘Sam’s Shout’ – but you’ll have to check in to score your secret perk.
