Northbridge's ode to Americana is the real deal, with wood-burning smokers and low 'n' slow pit cooking – get your yankee-style barbecue meats here, y'all
Porky's BBQ and Bar has just arrived on the Perth food scene, and they're wasting no time in serving up top-notch brisket and beer to local barbecue lovers. After a different dose of protein? Kansas-style pork ribs and whole barbecued chickens are also waiting to be devoured. All the meat on offer is the real deal, cooked with wood burning smokers for up to 12 hours.
Porky's doesn't skimp on the process of bringing an authentic taste of the USA to Northbridge. They're more than happy to share the details of their Southern-style cooking process: from the pit, the flavour rub, the injection (much tastier than it sounds – it's a liquid burst of spice, juices and marinade to keep the meat tender and delicious), to the foil wrap (it helps to tenderise the meat), and the sauce. Vegetarians, don't dismiss this place as carnivore-exclusive – the menu may be meat-heavy, but there are salads substantial enough to hold their own (pear, rocket, spinach, pecan, feta and pomegranate is just one) and quality pizzas dressed with various meat-free fancy such as pumpkin, kale, feta, pine nuts and balsamic onions.
While currently only open for dinner, there are plans for this Aberdeen Street establishment to claim some lunch rush territory soon. A boozy meal is easy to do here (and highly recommended) with a large curated range of craft beers, ciders and wine available to wash down that smokey barbecue goodness.
