Claudio Milani is Executive Chef at Brunello. A protégé of L’Anima’s award winning Chef Francesco Mazzei, Claudio’s menu will be classic Italian style. His food is best described as simple Italian home cooking in a chef’s hand, often combining three or four of the freshest seasonal ingredients to create the true flavour of Italy.
As with many of the world’s great chefs including Michel Roux and Thiery Marx, Claudio’s delicate touch comes from his training as a pastry chef.
Claudio came to London from northern Italy aged nineteen and for ten years worked with Calabrese legend Francesco Mazzei. The menu at Brunello will comprise of a series of Italian dishes from both north and south to reflect his homeland and his ten years with Francesco.
