The stock in (roaring) trade at this small, sparsely decorated Fitzrovia restaurant is authentically fresh and spicy southern Indian cuisine. The unadventurous might be content sticking with the handful of curry-house staples on the menu – chicken korma, butter chicken et al – but that would be missing the point. Ragam's real strength lies in its long list of well-executed, fairly priced Keralite specialities. Chief among these delicacies are dosas (£3-£4.95) – crispy, crêpe-like pancakes made with lentil flour and stuffed with all manner of gorgeous fillings. Try the traditional masala dosa, filled with potato masala and served with coconut chutney, or branch out with utthappam, a south Indian ‘pizza' made of rice and lentil flour. Service is professional and friendly, but expect a high turnover of diners – even on weekdays.
