Here you’ll find a menu which offers interchangeable starters and mains – have it in small portion to kick off your meal, and a bigger one to finish – of the likes of scorched Cornish mackerel with Yorkshire rhubarb and fennel sorbet; cured and roasted Lancashire belly of pork with spiced split green peas and neck of Cumbrian spring lamb.
