Pie Taste Test

We presented two sets of siblings—Nathaniel, 11, and Sascha, 6; and Gabriel, 10, and Madeleine, 8—with 11 pies from five of our favorite bakeries in the city. After each bite, the crew rated the pie on a scale of one to ten. We averaged the results to find the winners. (Please note that most of these pies require an advance special order, and that not all of them will be available in time for Thanksgiving.)

CHOCOLATE-BANANA CREAM PIE

The Lower East Side hot spot's Neil Kleinberg goes all out with this creation, layering chocolate pudding made from Callebout chocolate and cocoa with bananas on a graham cracker crust, then piling on Madagascar vanilla--infused whipped cream and sprinkling the confection with chocolate shavings.
SASCHA SAYS: "Ten. This has to get a ten."

CARAMEL APPLE PIE

This is no ordinary apple pie: Caramelized sugar is cooked with butter, vanilla, salt and heavy cream, creating a sauce that's tossed with crispy slices of Granny Smith apples for the filling. The topmost of the two handmade, all-butter crusts sparkles thanks to a final dusting of raw sugar.
MADELEINE SAYS: "The gooey part inside tastes a lot like apple sauce."

BUTTERMILK PIE

"It's a classic Southern custard pie," says Ivy chef-owner Daniellan Louie. The creation's smooth richness is derived from the eggs and buttermilk—whose flavor is magnified by the addition of Madagascar vanilla—plus the sugar-browned, all-butter crust.

CHOCOLATE CUSTARD PIE

Ivy's Daniellan Louie has a habit of perfecting one recipe, then tinkering with it to spawn an array of new versions. Here she's taken her basic buttermilk pie—eggs, sugar, flour, vanilla, buttermilk—left out the vanilla and added unsweetened cocoa powder to get a rich chocolate dessert.
NATHANIEL SAYS: "It's like brownie ice cream, with a tender chocolate taste inside."

CRACK PIE

Pastry chef Christina Tosi came up with the creamy-sticky pie, made from butter, sugar, heavy cream and vanilla in an oatmeal cookie crust, as a staff dessert during her days at wd~50. True to its name, the sugary treat is completely addictive.
GABRIEL SAYS: "It's really sweet, with smooth stuff, hard stuff and crinkly stuff."

CHOCOLATE PECAN PIE

This decadent creation is more than just the sum of its parts. Chopped pecans and semisweet Callebaut chocolate chips are placed inside a blind-baked crust, then bathed with a whisked concoction of maple syrup, eggs, sugar and browned butter (to give it a deep color). Raw sugar lends the pie, which can be ordered without bourbon for kids, a crispy top layer.

SALTY HONEY PIE

A whopping cup of honey goes into this rich, smooth pie invented by sisters Emily and Melissa Elsen, plus eggs, cream, sugar, butter, vanilla and cornmeal. The key, though, is the flaked sea salt on top, which cuts the sweetness brilliantly.
NATHANIEL SAYS: "I love the buttery taste, and the salt gives it a new, unique kind of feeling."
