The city's hot toque is now crowning the head of culinary wunderkind Jean-Denis Rieubland, who has replaced Bruno Turbot in the Negresco's flagship kitchen. Expect a sophisticated take on traditional provençal flavours, but with an accompanying price tag that is not quite so traditional. But unlike some of its more modern rivals, the Chantecler simply exudes style, from the moment you are ushered into its wood-panelled dining room right through to your last sip of vintage armagnac. Pure class all the way.
