Katherine McLaughlin opened this cheese factory in 2000, specializing in artisan cheese from small producers throughout Spain. The selection features many Catalan producers, the Turó del Convent cheese - of unpasteurized goat - and El PetitOT d'Alba, made by Mas d'Alba masoveros with sheep's milk from the farms own flock stand out with a sweet and mild flavor. The selection is not extensive but it is carefully constructed: Katherine visits the farms, tastes the cheeses and sometimes stays there to make them.
