Jean Luc Figueras, the old rocker of haute cuisine in Barcelona, is now taking the helm in the kitchen of the Mercer Hotel, with a dual purpose: Le Bouchon is a modern tavern, and Jean Luc develops the chef’s vision of haute cuisine, with dishes such as squab with foie gras and chocolate truffles.
