Fran Lópezstays true to well-executed classics with a ham croquette that’s creamy on the inside, rich in flavor, and packed with generous chunks you can taste in every bite, while also adding a vegan escalivada option that is smooth, aromatic, and full of the character of roasted vegetables. Meanwhile, Can Ros moves between sea and forest, offering a croquette of squid and another of mushrooms, two versions that play with familiar textures and flavors, executed with great finesse.
The celebration also includes two recipes closely tied to Catalan tradition, reinterpreted in a crispy format: asparagus, served with white asparagus sauce, cream, and green asparagus crudité, and escudella, a traditional escudella velouté from Casa Amàlia transformed into a crunchy bite.
