From the outside, The Notary barely hints at what’s waiting behind its unassuming door. Step inside and the world outside slips away: soft music, carefully designed lighting and even a signature scent create an instant mood shift. The Notary isn’t a large-scale luxury hotel - it’s a converted 19th-century manor with just nine suites and a very particular sense of style. Staying here feels like borrowing someone’s fantasy life for the weekend: elaborate interiors, quiet walled gardens, and a hidden canal-side terrace you can only spot when walking through the property to its very end, as though you’re being rewarded for finding a secret level.

Each suite is dramatically different, and the one you choose shapes your entire stay, but ​​all share the same opulent, House of Porters aesthetic. Think gilded mirrors, decorative objects everywhere, draped curtains, and mountains of cushions. It’s gorgeous to look at, but sometimes form wins over function. Each suite comes with the expected luxuries at this level: an emperor-size, supremely comfortable bed, white bathrobes and slippers, Sonos sound system, tablet-controlled lighting and temperature, and bathrooms with freestanding tubs and rain showers.

Breakfast here is anything but a quick coffee-and-croissant affair. The hotel serves a six-course, butler-delivered breakfast featuring charcuterie, French cheeses, pastries and other European delicacies. The same approach applies to dinner: The Notary’s Signature menu might feature foie gras with truffle and mango, while the seasonal menu includes dishes like burrata with smoked duck and fish of the day. However, the star attraction is the natural swimming pool, which curves across the lawn, framed by plants and with a fountain in the middle. It looks almost too pretty to actually get in - but you can. It’s unheated and filled with plants and fish, making it feel like plunging into a private pond.

Time Out tip: Book in summer if you want to make the most of the garden and pool.

Follow a tree-lined canal path, cross a small stone bridge, and you’ve reached your destination: a leafy cul-de-sac where charming old townhouses, all UNESCO-protected, line the street. This place is a no-frills stay that’s stylish and personal at the same time  a little slice of ‘normal Bruges’ that most visitors never see. It also has a clear philosophy: everything is vegan, from the food to the duvets, and things are done with a light environmental footprint in mind. The house is bright and airy, but not over-designed: just enough colour and quirk to remind you you’re somewhere special.

There are just four rooms, two at the front of the house with views over the canal and park, and two at the back. Each room has its own bathroom and shower, and basic amenities like a kettle, organic tea, a hair dryer, and a fan for the hot season. There’s no TV, no desk, no unnecessary extras  just a comfy bed, plenty of natural light, and a few standout design features like a translucent red wall that paints parts of the space in colour when the sun hits. There are also maps of the city, a small photo book looking back on the history and renovation of the house, and information on how to support the animal welfare campaign against Bruges’ horse-drawn carriages.

Breakfast here is a highlight  and a statement of values. Before your arrival, you receive an email with many options to choose from, and you can customise your own plate by checking boxes and choosing amounts. Salty, sweet, or both: the options are endless, and even include homemade Belgian waffles. While it might feel a bit strange to predict what you will feel like eating in advance, it makes a lot of sense: it’s a sustainable touch that prevents waste and ensures you get exactly what you like.

Time Out tip: There’s no daily cleaning or room service, which makes it feel more like having your own place.

3. Grand Hotel Casselbergh Brugge

4. Dukes' Palace Brugge

This five-star gem is the ultimate indulgence for those with a taste for luxury. Housed in a one-of-a-kind 15th-century former ducal palace, this hotel provides all the ingredients for an unforgettable stay. The superior rooms provide comfort in spades, but the real value lies in a larger room with a view. Garden and city views are available (it is hard to put anything above the garden view). If you really want to push the boat out, book a deluxe room with a rooftop terrace, a gorgeous setting to watch the sunrise or sunset with the most important person in your life. The marble bathroom is pretty special in its own right. Spacious suites are also available, and if you’ve got the euros, the Royal Suite “Mary of Burgundy” is every bit as impressive as you imagine. Family rooms are also available.

The food is pretty epic, too. Whether you're enjoying a buffet breakfast, a drink on the terrace or tapas plates at the ornate bar, one thing's certain: you’ll always return to your room with a contented and satisfied smile. Restaurant Julien continues the elegant aura of the hotel by serving classic dishes in a sumptuous space, although you might want to make a reservation for this one as it gets pretty busy. There is also a spa on hand, complete with saunas, salt walls, sunshowers, and more.

5. Boutique Hotel Sablon

Nestled in the heart of Bruges, between the Market Square and the Zand area, this revamped hotel sets the stage for a memorable romantic escape. You’ll hear no notes of disapproval from us. The 43 rooms at Hotel Sablon are expertly designed to maximise comfort, although we’ll leave you to discover that for yourself. The standard rooms tick all the required boxes, but it is in the suites that this place really shines brightest.

There are five suites available, ranging from the Sablon Junior Suite all the way up to the Loft, which is one of the biggest rooms in the city. It measures 84 square metres, giving visitors plenty of room to stretch out and feel at home in Bruges. The Family Residence suite is the perfect place for those travelling with children, while the Verlaine Suite is an homage to 19th-century French poet Paul-Marie Verlaine, a frequent guest at the hotel back in the day. If you’ve got a keen interest in the history of regional literature, this might just be the suite for you.

Befitting a boutique hotel of this quality, Hotel Sablon has become a particularly popular accommodation option in Bruges for lovebirds. 6. Hotel De Tuilerieën

This hotel truly has it all – an indoor swimming pool, an inviting garden terrace, a relaxing infra-red sauna, and fab views overlooking one of the oldest canals in the city. Inside, each room is equipped with a flat-screen TV, a comfy seating area, and a well-stocked mini bar. With such comfort and convenience, it’s tempting to stay put. But when wanderlust strikes, Bruges' top attractions, such as the Groeninge Museum and the Grote Markt, are just a stone's throw away, making it the perfect home base for your adventures. There are few better bases in Bruges than the splendid Hotel De Tuilerieën.

So, what about the rooms? There are 45 unique options at Hotel De Tuilerieën, each paying homage to the graceful 15th-century home in which the hotel sits. Looking for a place to house a large group of friends or family? This hotel's got you covered with various room options that can fit up to six guests. Decorated with cosy colours and modern furniture, each room features a flat-screen TV, a bathroom stocked with fancy soaps, and, of course, a tea and coffee station. There are 42 rooms on the property, and all are recently renovated, guaranteeing a comfortable, modern experience in this delightfully old city. The charming classic room (their words, but we’d say the same) is the perfect budget base for exploring Bruges, while the superior pent rooms (in the nearby Aragon House) are a little special, offering peace and serenity in a “home away from home” environment.

The real winner (if you’ve got the budget) is the luxury balcony room, an option that lives up to its moniker and then some. It isn’t the biggest luxury room in the city, but no space is wasted and you’ll not be short of room, particularly with the sumptuous terrace. For families on their way to Bruges, there are classic and luxury options, some of which come with a kitchenette. Residences are also available, should you decide that you just can’t pull yourself away from this delightful spot.

For breakfast, you can either head to the morning room for a buffet with hot and cold dishes, fresh treats, and baked goods, or, if it’s too difficult to get out of the hotel’s super comfy beds, you can ask the staff to bring your food directly to your room. It’s completely up to you. There is a wide selection of drinks on offer in the bar, another friendly spot to wind down after a long day of sightseeing in Bruges. Hotel Aragon isn’t a place packed with thrills and spills, but it more than does the job.

9. Raphaëlles Boutique B&B

Once upon a time, this place was a historic doctor's office. Now, it's Raphaëlles Boutique B&B, tucked away in the winding streets of Bruges. The rooms here are seriously nice, seamlessly blending the timeless charm of the building with all the modern comforts you could ask for - think Mirabel Slabbinck bedding and fancy Molton Brown toiletries. Contemporary design is the name of the game here, and each of the five rooms is straight out of a dream. When it’s time for breakfast, staff will serve up a continental spread, featuring local rolls, croissants, and cheeses, all carefully selected for their taste and quality. And, if the weather decides to play nice, you can enjoy your meal in their well-kept outdoor garden – another reason why this has to be one of the best boutique hotels in Bruges. There is a quiet excellence to everything at Raphaëlles Boutique B&B that is impossible to ignore and even harder to deny. The old beams of the Gardenia room make it a must for lovers of heritage architecture, although the comfort provided by the Mirabel Slabbinck bedding is straight out of the future. 10. B&B Exclusive Guesthouse Bonifacius

You won’t find many more aesthetically pleasing accommodation options than Bonifacius. This 16th-century bed and breakfast sits right on the canal in the centre of Bruges and is dripping in nostalgia, taking the city back to the past. It has been thoughtfully preserved but appears more or less untouched, leaving the deep-rooted historic ambience well and truly intact. Even if you aren’t staying here, you should absolutely go out of your way to check it out from the outside, as it makes for one of the city’s most impressive images.

However, if you can stay here, you absolutely should. Inside, expect to come across antiques, leaded windows, intricately patterned fabrics and ancient Gothic furniture pieces, ensuring that the substance matches the style. Rooms are functional without being opulent, letting the location and history do most of the heavy lifting. Still, the beds are comfortable, the bathrooms are sizeable, and there are plenty of mod cons to keep you grounded in the 21st century. It is all too easy to be whisked back to medieval times in a place like this.

Make use of the sunny waterfront terrace, offering breathtaking views of characteristic monuments such as the Palace of Gruuthuse. When the weather is cooperating, breakfast is served here on the balcony, and there aren’t many better ways to start the day in Bruges. There is a spellbinding quality to Bonifacius that enchants from start to finish, and while that may be the hyperbolic nature of Bruges shining through somewhat, we aren’t about to restrain ourselves. Bruges is a city that shimmers with warm nostalgia, and this boutique option next to the bridge and the canal is arguably the perfect example of its charms.
