Chaat-and-cocktails favourite Bhawan is coming to Time Out Market Delhi at Worldmark, Aerocity, along with Mizu and Chard.

Time Out Market Delhi has its first three restaurant names, and Bhawan is one of them. The Gurugram chaat veteran is joining Mumbai's Mizu and Delhi's Chard at what will be India's debut Time Out Market!
The Market, the first of its editorially curated kind in the country, is set to open at Worldmark, Aerocity by the end of 2026. Read more about it here.
Bhawan opened as a cloud kitchen in 2020 and became a physical restaurant in Gurugram in 2022. The goal was to be a one-stop shop for chaat, snacks and mithai from all over the country, and make it taste like the street it came from.
The cult classics that shot them to fame, though, are their twists. The Bacon Kachori, Egg Appam Benedict, Mushroom Haleem, Varqi Lukmi, and the Tiramisu Rasmalai, to name a few. Their mithai makes room for hazelnut, apple, and Nutella in laddoos and barfis.
‘We’ve always had our heads in India’s streets… A garnish often steals the show. Recipes are tweaked on the fly,’ co-founders and culinary directors Kainaz Contractor and Rahul Dua say. ‘At Bhawan, we take our favourite roadside discoveries, home-kitchen gems and hyperregional finds, and lean into that spirit of improvisation.’
Ask them what makes Delhi NCR's food scene tick and the duo’ll tell you it's the people who moved here. ‘People from every corner of India have made Delhi their home, and each community has added something to the richness of what we eat here. From Bihar's litti chokha to Naga smoked pork and Bombay's sev puri, Delhi offers some of the finest examples of regional Indian cuisine.’
‘At Bhawan, we have always celebrated India's street food in all its regional diversity, so 'the best of the city under one roof' feels like a natural extension of who we are,’ they say.
At the Market, the counter will bring over the Bhawan classics: Kanpur's Gadbad Chaat, Benarasi Tamatar Chaat, Palak Patta Chaat and more. Then come the reworked dishes, where the kitchen has pushed things a little further. We’re talking a Mutton Birria Seekh Kebab, a Goan-inspired Prawn Toast, and more.
But there’s also a Market-exclusive menu in the works. Stay tuned!
The team says it likes to keep tinkering, sharpening the spice and amplifying the crunch until a dish surprises even them.
