On Monday, June 13, Ben McPherson will be taking over the kitchen at Moving Sidewalk to try out some Cochinita Pibil as he moves forward on his next project.

The cochinita pibil will be Berkshire pork shoulders marinated in traditional flavors, wrapped in banana leaves and then slowly smoked in a pit with oak and pecan. This dish will be a preorder feature for his partnership in the El Burro & The Bull BBQ Restaurant which will be coming soon at a location TBA.

There will plenty of options for everyone.

Menu:

Elote: corn roasted in the pit, crema, mayo, toasted guajillo chili, cotija cheese, cilantro

Nopales Tacos: ember roasted nopales, queso oaxaca, avocado, cilantro

Cochinita Pibil: Berkshire Pork marinated in achiote, sour orange, oregano and other spices, wrapped in banana leaves and then smoked on a bbq pit until tender

Tacos: habanero pickled onions, avocado, cilantro

Torta: french bread, cabbage, tomato, habanero pickled onions, avocado, cilantro

Panuchos: tostadas, black beans, cabbage, tomato, habanero pickled onions, avocado, cilantro
