What is it: The go-to kiosk for Amritsar's mathi chole and pija kulcha.
Why we love it: Sure, you'll find these dishes elsewhere in the city, but locals treat this one as non-negotiable and one bite tells you why. Mathi (a fried pastry) and kulcha (a bread bun, not to be confused with the tandoor kulcha above) are bathed in a mild chickpea curry, then topped with onion, pickle, olives and tamarind chutney. Take your pick between the mathi or the pija kulcha – 'pija' being Punjabi for drenched. The plates are assembled right in front of you with practised speed, and while there's nowhere to sit besides some tall tables outside, that hasn't dented the crowds at this nearly 40-year-old institution. Don't be shy about asking for a chole refill because it's practically expected.
Time Out tip: Order kulchas on the side for a different way in. And avoid lunchtime unless you enjoy waiting.
