Manam Chocolate founder Chaitanya Muppala has eaten (and made) enough dessert to spot the real deal instantly. These are his favourites across India

For years, Chaitanya Muppala, founder of Manam Chocolate, admittedly believed great chocolate belonged to Europe. ‘Good chocolate was always imported,’ he says. ‘The kind family brought back from abroad and rationed like treasure.’ I’ve hoarded enough boxes of Godiva chocolate as a child to know exactly what he’s on about. 

The ‘eureka moment’ came during lockdown. Sure, growing up around premium mithai (his family runs Almond House, Hyderabad’s beloved sweets institution) had already sharpened his palate. But somewhere along the way, Chaitanya went full Charlie Bucket and vanished into the world of cacao, including all the fiddly and necessary bits: farming, fermentation, roasting, tempering, pastry, dessert, the whole rabbit hole. And the deeper he went, the more he realised Indian cacao had been massively underestimated. ‘We didn’t need to copy Europe,’ he says. ‘Indian chocolate could have its own thing going on.’

That little obsession has snowballed into a mini chocolate empire: there’s Manam Karkhana in Hyderabad, a store in Delhi, and enough expansion plans to keep his calendar looking mildly terrifying. Naturally, this also means he now eats dessert with the focus of someone silently auditing cocoa percentages. Which makes him exactly the person you want recommending chocolate desserts across India.

Thankfully, none of these picks rely on gold leaf or unnecessary theatrics. They made the cut for the right reasons: balance, texture, and that rare ability to occupy brain space long after the meal is over.

Manjari Chocolate Mousse | Lupa, Bengaluru

Chaitanya knows the phones are out before the flambé even begins. Honestly, looking at the ingredient list, what’s not to love? There’s 64% Madagascan Valrhona chocolate mousse, caramelised white chocolate, sour cherry coulis, roasted macadamia praline and then, the pièce de résistance: a tableside flambé with rum or brandy. 

Chaitanya feels the flavour outdoes the drama. ‘The balance was insane,’ he says. ‘The cherry kept cutting through the richness, the praline brought crunch and the mousse had this slight tang that made you keep going back for another bite.’ 

It’s a pretty grandiose affair. ‘The whole room sort of paused when they brought this one out,’ he laughs. ‘Nearby tables forgot their own desserts existed.’

Canteen Black Forest | The Bombay Canteen, Mumbai

Most black forest desserts come with a heavy dose of birthday-party nostalgia.. You rarely see the combination done well anymore, but The Bombay Canteen manages to make it feel nostalgic and fresh at the same time.

There’s warm chocolate cake, cherry stracciatella ice cream and milk chocolate custard. ‘It hits you with nostalgia first,’ says Chaitanya. ‘And then suddenly you’re analysing textures like you’re on MasterChef.’

The warm cake and cold ice cream do their classic opposites-attract thing, while the cherry keeps the dessert from spiralling into overly rich territory. And then the milk chocolate custard comes in and somehow makes the whole thing work. This dessert completely destroyed civil behaviour at the table, he confesses. ‘We ordered one to share because everyone claimed they were full. Thirty seconds later, people were guarding bites like their life depended on it.’

And then came the bonus reveal: the chef later told him the dessert used multiple Manam Chocolate couvertures. Safe to say, that earned the dessert major brownie points with Chaitanya.

Pecan Caramel Entremet | Manam Chocolate Karkhana, Hyderabad

Look, obviously something from Manam Chocolate’s own dessert empire was always going to make this list. The Pecan Caramel Entremet makes a pretty strong case for itself. There’s caramelised pecans, soft sponge, caramel and a milk chocolate mousse made using single-origin West Godavari chocolate.

‘It’s dangerously easy to keep eating,’ Chaitanya says with satisfaction. ‘You think the richness will slow you down, but then the pecans show up and suddenly you’re back for another bite.’

Bitter Chocolate cake | Ye Old Bakery, The Claridges New Delhi

No deconstructed nonsense. No edible gravel. No tiny portions that disappear in two bites and leave you emotionally unresolved. Just a really good chocolate cake at The Claridges New Delhi. ‘It’s straightforward in the best possible way,’ says Chaitanya. ‘Dark chocolate ganache, light sponge, and proper bitterness.’

In fact, he almost underestimated it because it looked too simple. ‘It arrived looking very low-key and I remember thinking, okay… this could either be incredible or plain disappointing,’ he laughs. ‘Then the first bite completely shut me up.’ It’s also become his go-to recommendation for people who insist they ‘don’t really like dessert’.

Raspberry Dark Chocolate Mousse Cake | Sapa Bakery, Mysuru

You don’t walk into a bakery in Mysuru expecting a life-altering pastry moment. And yet, that’s exactly what happened to Chaitanya. He picked up the Raspberry Dark Chocolate Mousse Cake pretty casually at Sapa Bakery, found a table outside and halfway through eating it, was mentally transported to a tiny patisserie in Paris.

‘The raspberry completely changed the dessert,’ he says. ‘It cut through the chocolate so well that suddenly I was sitting there having flashbacks to French pastry shops.’

Which is exactly what caught him off guard. The dark chocolate whipped ganache brings all the richness, while the raspberry compote keeps things bright and weirdly light for something this indulgent. One bite feels comforting, the next feels suspiciously sophisticated.

Part of the charm, of course, is that German baker Dina Weber has built the kind of bakery that’s earned cult status without making too much noise about it. The menu changes constantly, there’s always something fresh on the counter and every visit feels like you’ve accidentally stumbled onto a very good secret.

The Bokkepootje | Zera Noya, Kochi

Another wildly underrated pick on Chaitanya’s list, and honestly, exactly the kind of place you want food people gatekeeping a little. At Zera Noya in Kochi, he almost always orders the Bokkepootje, which is technically an almond meringue cookie filled with apricot buttercream and dipped in dark chocolate.

‘The textures go a little crazy,’ he says. ‘You get the crisp meringue, the tangy apricot and then this slightly bitter dark chocolate situation at the end. It somehow keeps changing every few seconds.’

The bakery itself has a lovely backstory too. Founder Sarah Lisa met her husband Vibin while they were working aboard a ship and the two eventually opened Zera Noya together in Kochi. After Vibin passed away following a cancer diagnosis, the bakery became something much more personal. ‘Once you know the story, the whole place feels different,’ says Chaitanya. ‘You’re sitting there eating this beautiful little Dutch cookie and suddenly there’s so much emotion attached to it. It really stays with you.’
