Bugsy Siegel’s lust for extravagance set the scene for modern-day Las Vegas. Paying homage to Siegel and his inner circle of original mobsters, El Cortez Hotel & Casino presents food with attitude at the morning, noon and night dining concept, Siegel’s 1941. Siegel’s 1941 offers extensive menus filled with modern twists on classic American standards. The kitchen is helmed by Chef Aaron Neeley.
