Shotgun Willie’s is a Texas-style barbecue joint right outside of Nashville that isn’t shy about its heritage—you’ll find Lone Star state paraphernalia plastered all over the place like posters, pennants, and neon signs of Lone Star state beer brands beckoning you to grab a bottle. But the Texas pride doesn’t stop at the decor. The food takes its cue from the state, too. Especially the brisket and ribs, which are smoked over white oak and pecan wood. 

While the tender-as-all-get-out brisket is a huge draw, the cheddar jalapeno Texas Hill Country sausages are a juicy revelation. Pair it with the dill pickle potato salad, and you’ve got the platonic ideal of a barbecue meal. 

The set-up is fast casual here. Expect to wait in line for a bit until you make your way to the counter to order your meat in bulk (a quarter pound is the minimum), a few sides, or a platter that’s the best of both worlds (each one comes with your choice of meat and two sides). The hearty sandwiches layered with brisket, pork or sausage are also a solid choice, but whichever way you go, don’t skip out on dessert. You’ll kick yourself for missing out on some mighty fine bourbon banana pudding.  

The vibe: The big, cavernous space truly feels like a fast-casual operation—order, sit, eat, leave. 

The food: Texas-style smoked meats with a particularly exceptional brisket. 

The drink: Shotgun Willie’s keeps it simple: fountain drinks, tea and beer. 

Time Out tip: Get there early if you want brisket. The sell-out risk is high.
