Nic Ratner, along with Shoolbred's owner Rob Morgan and the costume designer William Ivey Long, are honoring New Orleans' Ninth Ward with this gothic bar, designed to look like it's been standing since the 19th century. Twelve taps will pour Louisiana's best-known beer, Abita, along with a changing selection of craft brews, like the rare Brooklyn-made Voodoo Bock. Cocktails, meanwhile, will include Big Easy classics like the Sazerac, "but not with Day-Glo plastic cups," says Ratner. "It's not that New Orleans."
