Celebrated Seattle cheese-maker Beecher's operates this curd complex, featuring a restaurant, café, retail shop and 3,000-square-foot cheese-making facility. Watch as vats of local milk are converted into artisan curds from one of four windows surrounding the work space. You can find the resulting products, including a washed rind Flatiron cheese exclusive to New York, among the 100 selections in the ground-level shop. An adjacent daytime café serves the outfit's famous mac and cheese, grilled melts, soups and salads. Descend into the subterranean Cellar restaurant—decorated with exposed brick, raw-wood communal tables and a cowhide banquette—for more sophisticated shareable plates. The menu includes small dishes like roasted pork with tomatillo sauce and five haute mac-and-cheese variations.
