The storied butcher shop opens a 40-seat burger joint down the street. The patties are made fresh throughout the day from a mix of chuck, short rib and brisket. Add-ins like jalapeño, caramelized onions, chipotle, steakhouse seasoning and bacon-cheddar can be folded into the meat.
