Chefs Joel Hough and Nicholas Morgenstern (The General Greene), who worked together at Cookshop, reunite at this New American bistro. The 50-seat restaurant, outfitted with an arched tin ceiling and weathered copper bar, takes its name from Washington Irving, who first dubbed Manhattan "Gotham," an Anglo-Saxon word meaning "goat town." Hough handles the savories, turning out a selection of salads, sandwiches, raw-bar plates and farm-to-table mains like roasted baby chicken with brussels sprouts, turnips and carrots, and braised pork shoulder with kabocha squash and mustard greens. Pastry specialist Morgenstern will contribute homey desserts such as a lemon tart with crème fraîche and a bourbon-pecan apple pie. True to the restaurant's local, seasonal approach, a backyard garden will supply fresh produce.
