James Beard Award winner Andy Ricker, of Portland, OR's Pok Pok, takes his signature fried fish-sauce wings to the Lower East Side with this Southeast Asian joint. Inspired by a Saigon street snack, Ricker marinates the chicken in fish sauce, garlic and sugar, deep-fries it and coats it with the caramelized marinade. Diners can bolster their orders with som tum (Thai-style papaya salad), sticky rice and khao man som tum (papaya salad with coconut rice and braised pork). To drink, find Ricker's TONY-approved line of drinking vinegars, Som, in flavors like pomegranate and tamarind.
