Jaume Marambio and Vicky Maccarone, the duo behind the acclaimed Japanese-Mediterranean restaurant Alapar, are the brains behind this superb vermouth bar. It’s run by Jaume’s brother, Sergio – an excellent bartender. Expect beer, wine, cocktails, and around 20 different vermouths from Catalonia, the Basque Country, the rest of Spain and Italy. Vermouths here are mixed with tonic water instead of the traditional soda siphon.
As for food, there are sharing plates – Ebro Delta oysters with ponzu sauce, matrimonio (anchovy and white anchovy), marinated and smoked mackerel, and a Russian salad sandwich – plus three toasted sandwiches: fricandó with pickles; confit pork jowl with cheese and mustard; and sobrasada with Mahón cheese and honey. Don’t leave without trying the flan made with Lustau vermouth.
