It's no secret - we like to collaborate. Our doors are always open and we welcome the opportunity to work, learn, share and brew beer with others. Collaborating truly epitomises what we're all about so it's no real surprise that we've crafted nearly 40 collaborative projects at Newstead alone. Every single one was memorable however the 38th will always have a special place in our hoppy little hearts.

A few weeks ago we welcomed a brewing legend and mastermind into the brewery in the form of Jeppe Jarnit-Bjergso from Evil Twin Brewing. We were proud and grateful that Jeppe hung with us all day not to mention the fact that he allowed us to brew and name a beer based on one of his own renowned and exemplary creations...

Taking Falco IPA as a base recipe we kettle soured the wort before fermentation. What results is simple, a sour version of Falco. With the same malts, hops and yeast, and an added dimension of acid, this sour IPA has fallen prey to tang. The relatively mild pH of 3.6 shows strongly against the pale malt base and sits juxtaposed with the citrus hop character. Double dry hopped for good measure and sitting at 7%, Sour Falco swoops in for the kill.

We can't thank Jeppe enough and we're sorry he can't be around for the unveiling.
