Star chef Ákos Sárközi opens new restaurant at Time Out Market Budapest

On September 11, Fúzió by Textúra and Borkonyha brings together the kitchens of two top restaurants in a relaxed milieu

What happens when the contemporary Hungarian cuisine of Michelin-starred Borkonyha meets the playful and experimental approach of Textúra? You can taste the answer at Corvin Palace from September 11. We are the first to report that a new restaurant called Fúzió by Textúra & Borkonyha will be opening at Time Out Market Budapest, under the expert guidance of star chef Ákos Sárközi.

Fúzió was born from the joint thinking of two well-known Budapest restaurants. Borkonyha has held its Michelin star since 2014, its Hungarian and Transylvanian culinary traditions dovetailing with contemporary techniques and international influences. Textúra, which opened in 2018, approaches gastronomy from a more experimental, playful perspective.

The new concept does not simply place the dishes of the two restaurants beside one other. Rather, it transposes their shared approach into the more relaxed, informal world of Time Out Market Budapest, where Hungarian bistro dishes will be served in an easier-to-access format.

Ákos Sárközi’s goal is to reduce the distance between the guest and fine dining, and to showcase his cuisine to those who might not otherwise patronise a high-class restaurant.

Three signature dishes, available exclusively at Time Out Market Budapest, are also being prepared for the opening: duck liver with Tokaji aszú dessert wine, pear and stangli breadsticks; juicy roast pork in a brioche with thyme sauce; and a dessert inspired by the revered cottage-cheese confection, Rákóczi-túrós, called Barackvirág – Peach Flower. The idea for the roast pork arose through a vintage Hungarian classic, szalóntüdő, lung stew.

Fúzió by Borkonyha & Textúra opens on September 11 on the first floor of the Corvin Palace on Blaha Lujza tér. Time Out Market Budapest awaits guests daily from 11.30am to 11.30pm and the kitchens stay open until 10pm.
