OKONOMIYAKI AS YOU LIKE IT!

From Freep Five: Great Japanese food - not sushi - in metro Detroit

Originally a street food, okonomiyaki translated from Japanese means “whatever you like, grilled.” There are a few different styles of okonomiyaki. Kansai style mixes everything together with the batter, while Hiroshima style layers each ingredient on top of the batter. Start with a flour/water/egg batter, mix in Japanese mountain yam, dashi, Napa cabbage, add in items such as shrimp or bacon, then cook until the thick cake’s outside is crisp and the creamy inside is piping hot. Slide it out of the pan onto a plate and top with Japanese mayonnaise (thicker and sweeter than our native Hellman’s), okonomi sauce, aonori flakes and bonito flakes. It’s these last items that turn a good thing into a sublime one, adding a savory, fishy flavor and a feast for the eyes as the heat from the pancake causes the flakes to wave and dance on the surface.
