Illegal Jack’s reopens after successful Kickstarter pitch

Good news burrito fans – Illegal Jack’s has reopened in Edinburgh.

More than 300 days after closing, the Tex-Mex restaurant has now opened the doors to its new site on St Patrick Square after raising £80,000 through a high-profile crowdfunding campaign which garnered support from author Ian Rankin.

The site on Lothian Road was forced to close last year after a leak from a neighbouring property led to the collapse of the ceiling. As a result of the subsequent wasted stock and cash flow issues, owner Jack Muir shut up shop but was unable to secure a loan to reopen from the banks. Muir says this is because they're wary of supporting what they see as a startup instead of an established business, so he went to the public via Kickstarter instead.

Muir eventually raised a total of £80,359 from 1,030 backers to open the new site, so you can once again get your fix of tacos, fajitas and burritos.
