Featured oysters will be:

•Alpine Bay oysters, which are harvested and handpicked in Price Edward Island, Canada. These oysters have a crunchy bite and a clean aftertaste.

•Blue Point oysters, which have a fresh, crisp, firm texture and a sweet aftertaste, commonly found in Long Island Sound, New York and Connecticut.

•La St. Simon oysters have a clean and briny taste with a creamy finish, and can be found in Saint Simon Bay and Shippagan- New Brunswick, Canada

•Wild-grown Malpeque oysters, which have a flavorful buttery taste and can be found all year-round

•Martha’s Vineyard Oysters are harvested in Martha’s Vineyard, Massachusetts and consist of a creamy meat with a clean seaweed flavor

Suggested oyster and beverage pairings include:

The Miette, which is made with Aperol, Lillet Blanc, Prodige Sparkling Wine, fresh, lemon and cane sugar with Martha’s Vineyard oysters.

The Vesper Martini features Dripping Springs Artisan Gin, Well No. 1876 Vodka, Lillet Blanc, and fresh lemon with Blue Point raw oysters.

Uberland Riesling pairs well with the Asian Grilled Oyster. Lastly, the Gold Rush, which includes Old Forester Bourbon, Topo Chico, fresh lemon and cane sugar and with Chef Jonald's BBQ Oysters.
