Chef Carlos Guia delivers an American-flavored, Cajun-influenced menu with a ton of terrific dishes, including recommended plates like Chef Carlos’s Gumbo and creole-spiced Colorado bison rib-eye. Some of the tables overlook the hotel’s own golf course. A jazz brunch is served on Sundays.
