Japanese firm Super Potato designed this culinary theater to complement Martin Heierling’s world cuisine, a combination of Italian and Asian influences, grilled dishes and seafood classics. Four glass-enclosed kitchens in the middle of the room provide an interactive stage: watch curries plunge into a red-hot tandoori oven on the Asian stage; spot focaccias with vacherin cheese and black truffles slipped into a wood-fire oven in the Italian corner; and see Blue Point oysters shucked in the raw section.
