Montréal food-truck pioneer Grumman ‘78 practically resuscitated the street-food scene back in 2010 with their fusion-heavy bites that continue to find few equals elsewhere. Blending inspirations from Latin American cuisine, Tex-Mex and beyond—think popcorn turbot tacos, ooey-gooey bowls of Papas ‘78 (sweet potato home fries with queso) or a tomato salad with a cornbread crumble—owners Gaëlle Cerf, Hilary McGown and chef Sébastien Harrison Cloutier are setting a lot of high bars for experiential eats in Montréal.
