Mead is an alcoholic beverage with just one stipulation: at least 51% of the fermented sugar source must come from honey. This leaves a lot of room for creativity in the industry, with a wide breadth of craft varieties to choose from.

Join Bee Thinking and Nathan Mattis, from the renowned Fringe Meadery of Portland, as he leads a comprehensive and hands-on overview of all the general methods for creating many types of meads with differing alcohol contents, flavor profiles, and carbonation. Nathan will lead an intensive course over 3 separate days to cover the entire process from mead must (unfermented starter mixture) to bottle. Nathan and the students will work together to create 4 large batches of mead with a cornucopia of seasonal summer fruits, herbs, and spices to choose from to add to the brew.

The three dates are:
- Saturday, August 13, 2016 from 3pm-6pm at Bee Thinking (preparing mead must)
- Sunday, August 28, 2016 from 3pm-5pm at Fringe Meadery (pulling fruit and racking Carboys)
- Sunday, December 11, 2016 from 3pm-5pm at Fringe Meadery (bottling and tasting
