Master the basics of whole-food, organic cooking while learning new culinary techniques and styles. In this class, we will explore how to cook with animal protein. You will be given information about properly sourcing, health implications, ideal consumption amounts and proper cooking techniques to enhance nutritional value. We will discuss nutrition information, how they are processed for human consumption, as well as traditional and modern preparation techniques. After understanding the journey from nature to the point of purchase, we take the food to the table by preparing three recipes that highlight concepts discussed including:

- Catch-of-the-day Ceviche
- Carne Asada Tacos with Chipotle Crema
- Lime Cabbage Slaw

All ingredients and materials are included in the class fees. Attendees will receive generous samples and printed recipes to take home. Classes are $40 each with discounts available for students, seniors and military.
