Time Out says

The desserts lined up along the glass display at Équilibre are all made by star pastry chef Junji Tokunaga, who’s previously worked at luxury hotels like The Ritz Carlton Osaka and Hotel Intercontinental Tokyo Bay. He’s even been runner-up at The World Pastry Cup, so you know his creations are going to be just as tasty as they look. Équilibre means ‘balance’ in French, and each pastry here is created with the perfect balance between all four components: texture, aroma, acidity and sweetness.

You’ll find traditional cakes including strawberry shortcakes (¥670), classic fôret noire (¥730) made with layers of vanilla and chocolate cream, and a deep amber mont blanc (¥810), plus Tokunaga’s own creations like a chestnut and rum raisin cake (¥890) and a ’Makko-chan’ raspberry and buttercream layer cake (¥700) which were originally created for Japanese TV shows that Tokunaga consulted on, including La Grande Maison Tokyo and Kono Koi Atatamemasu Ka. If you’re looking for more portable treats, the shelves are also stocked with individually packaged baked goods like tarts and pound cakes, too. 

While the products are currently offered for takeout only, chef Tokunaga is looking at installing an eat-in space in the near future. He also plans to expand his menu with parfaits and chocolates, too.
